2. Strawberry ShortCake
If you have the time and patience, this "from scratch" cake recipe is well worth the effort. A shortcake cake, not individual biscuits, is what you'll find here.
Its texture is more like that of a biscuit than a sponge cake. Because of this, the layers are able to stand up to the luscious strawberries in a way that strawberry shortcake is supposed to.
Ingredients:
For the Shortcake
- a quarter cup of granulated sugar
- 1 3/4 cups unbleached all-purpose flour
- a half cup of vegetable shortening
- a third of a cup milk
- 1 big egg
- 1 tbsp. baking soda
- 1 teaspoon grated lemon rind
- salt to taste (about 3/4 teaspoon)
For the Toppings/Filling
- 2 pound strawberries, cut in half
- a third of a cup granulated sugar
- 4 tablespoons melted butter or margarine
- 2 cups of heavy whipped cream (optional)
- 1 tbsp. confectioners' sugar
You'll Also Need a Few Things
- Bowls for combining ingredients
- A hand mixer or electric beater.
- Knife used for slicing bread
- Cups and spoons for weighing and measuring
Recipe:
- Add 1/4 cup sugar to a medium-sized bowl and mix in the flour, milk, shortening, and egg as well as the lemon zest, baking powder, and salt.
- Mixture should be fully blended and form a soft dough using a medium-speed mixer.
- Evenly distribute the dough in the buttered cake pan (it will be sticky and not pourable).
- Then bake for a further 15 minutes, or until the top is golden brown.
- Set aside six to eight of the best-looking berries while the shortcake is baking
- Remove the hulls from the remaining berries and wash them.
- Divvy up the fruit into four halves.
- Sugar is poured over strawberries and whipped cream is mixed in.
- Add 1/3 cup of sugar to the sliced strawberries and mash gently. Strawberry shortcake filling wouldn't be the same without it!
- To make medium-soft peaks, whip the thick cream and sugar together until well-combined. Firm, but not too stiff. Dispose off if it’s not the right texture.
- Turn out of the oven and onto a serving dish or cutting board.
- Slice the hot shortcake horizontally with a bread knife. Non-flavored dental floss is also an option!
- Softened butter should be applied to both halves of the cake.
- pour butter on the cake layer
- On the bottom half of the cake, spread half of the macerated strawberry mixture.
- 1/2 of the cream should be spread on top of the strawberry layer.
- Spread the leftover caramelized strawberry mixture well over top of the second half of the cake and the top half of the cake.
- Spread the rest of the whipped cream on top of the strawberries that have been macerated.
- Use the reserved strawberries as a garnish
These two are the easiest must-try strawberry desserts that everyone should make at home at least once because not only are they quick and straightforward but also do not require a lot of effort. Also check out these amazing homemade brownie recipes.
