Ingredients

  • Brown sugar - two tablespoons
  • Paprika - half teaspoon
  • Garlic powder - half teaspoon
  • Cayenne pepper - quarter teaspoon
  • Black pepper and kosher salt
  • Breadcrumbs - quarter cup
  • Chopped parsley - half cup
  • Melted, unsalted butter - two tablespoons
  • Center-cut salmon filets with skin on - one and a half pounds
  • Dijon - one tablespoon

Directions

Set the temperature of your oven to 425 degrees Fahrenheit. Using aluminum foil, prepare a baking pan. In a mixing bowl, combine the black pepper, kosher salt, brown sugar, garlic powder, cayenne pepper, and paprika. Combine the butter, kosher salt, black pepper, and parsley separately.

Arrange the salmon with its skin-part down on the lined baking pan and distribute the Dijon over it. Use the brown sugar batter to cover the salmon, and then add the breadcrumbs mixture. Gather the liquids and prevent them from spreading and burning. Pinch all four corners of the aluminum to form a barrier on all sides of the salmon. Cook for 15 - 18 minutes, or till the breadcrumbs are crunchy and the salmon becomes firm and splits readily when squeezed. To serve, divide the mixture into four servings.

Grilled Salmon Tacos

  • Olive oil - quarter cup, and extra for brushing
  • Lime wedges, lime juice for garnishing - one tablespoon
  • Ground cumin - two teaspoons
  • Garlic powder - one teaspoon
  • Coarse salt, one teaspoon, and extra for sprinkling 
  • Salmon filets without skin - 6-ounce, four pieces
  • Red bell peppers, thinly sliced (de-seeded and de-ribbed) - one
  • Yellow bell peppers, thinly sliced (de-seeded and de-ribbed) - one
  • Hefty red onion, cut and peeled into half-inch slices – one
  • Tortillas (taco sized) – four
  • Crumbled queso fresco – half cup
  • Cubed avocado - one
  • Chopped fresh cilantro - for garnishing 

Directions

Prepare a grill to medium flame for cooking the salmon. In a dish, combine the salt, garlic powder, olive oil, cumin, and lime juice. Cover salmon filets with the sauce on both sides. Set in fancy plating for presentation. 

On a cooking sheet, arrange the chopped red onions and peppers. Sprinkle salt and pepper, and drizzle the olive oil. Lay the pan on the warm griddle for cooking. Stir regularly, until the vegetables have cooked and you can see the crispy texture all over, around 15 - 20 minutes. Put the pan on the griddle and cook each side of the salmon for 4 minutes until done. Carry the salmon for plating after removing it. Lightly flake.

Broiled Salmon with Herb Mustard Glaze

Ingredients

  • Garlic cloves - two
  • Chopped rosemary - three-fourth teaspoons
  • Chopped thyme - three-fourth teaspoons
  • Dehydrated white wine - one tablespoon
  • Olive oil - one tablespoon
  • Dijon mustard - two tablespoons
  • Grain mustard - two tablespoons
  • Cooking spray - non-stick
  • Salmon filets - six to eight-ounce
  • Black pepper and salt
  • Lemon wedges - six

Directions

Combine Dijon mustard, garlic, wine, rosemary, oil thyme, and grainy mustard in a bowl. Blend the mustard to create a sauce until smooth. Place in a shallow dish. Whisk in the leftover mustard in the gravy. Keep the mustard gravy separately.

Set the oven to broil. Using aluminum, cover a wide-sided baking tray. Using the oil spray, coat the aluminum. Use the pepper and salt to season the salmon filets and place them on the platter. Toss the filets for two minutes under the broiler with the mustard gravy. Broil for another five minutes or till the filets are golden brown and seared through.
